Introduction

An overview of our Express Thai cooking classes

Our cooking school is known to vegetarians and vegans throughout the world. Our express class is a two hour class held at 3pm and 5pm.

May Kaidee's cooking school has been around since 1988 and we've proudly hosted thousands of students since then from over 50 different countries. Our express class is a great introduction to Thai cooking for those with a limited schedule.

3pm Class Schedule

3:00 PM - 3:10 PM
IMPORTANT: Our express Thai cooking classes are temporarily starting 30 minutes after the hour. 3pm classes begin at 3:30pm and 5pm classes begin at 5:30pm.
Class Introduction

During this time students get acquainted with the instructor and fellow students.

Complimentary Water

Students are provided a bottle of water.

Course Material Overview

Each student receives our special course notes to review, which is later read in more detail during the hands-on cooking phase.

3:10 PM - 3:30 PM
Cutting Vegetables and Ingredient Preparation

Students begin by preparing some of the ingredients that will be used in the dishes they will prepare.

Discussion of Thai Spices and Herbs

The class begins with an introductory discussion of Thai ingredients, some brought directly from our organic garden.

How to Make Chili Paste

A lesson on making chili paste is taught after a discussion on Thai ingredients. Many students experience using a mortar and pestle for the first time, which is a common tool in Thai cooking that liberates an array of scents and tastes from the fresh raw ingredients used in chili paste.

Bangkok classes on Monday, Wednesday, Friday and Sunday: Tom Yam chili paste only taught on these days

Bangkok classes on Tuesday, Thursday and Saturday: Green curry paste only taught on these days

All Chiang Mai classes: Red or green curry paste made in a mortar and pestle

Bangkok: Main Lesson - Cooking 3 recipes (Taught on Wednesday, Friday and Sunday)

During the main lesson time you will learn to cook the following recipes:

  • Tom Yam Soup
  • Stir Fried Vegetables and Cashew Nuts
  • Massaman Curry
Bangkok: Main Lesson - Cooking 3 recipes (Taught on Tuesday, Thursday and Saturday)

During the main lesson time you will learn to cook the following recipes:

  • Tom Kha Soup
  • Pad Thai
  • Green Curry
Chiang Mai: Main Lesson - Cooking 3 recipes (Taught Monday-Saturday)

During the main lesson time you will learn to cook the following recipes:

  • Tom Yam Soup
  • Pad Thai
  • Red or Green Curry
  • Blue Sicky Rice with Mango Dessert (a special blue version of the classic Thai dessert)

5pm Class Schedule

5:00 PM - 5:10 PM
IMPORTANT: Our 5pm express Thai cooking class is temporarily starting 30 minutes after the hour at 5:30pm, and is only taught in Bangkok on Wednesday, Friday and Sunday. We do not teach the 5pm class in Chiang Mai.
