Introduction

An overview of the class

Soy beans have traditionally been an important part of a plant based diet. Soy products, namely tofu, contain an abundance of protein, making it a perfect ingredient for vegetarian and vegan meals.

Students in this class learn how to make tofu beginning with soaking soy beans through the entire process to produce blocks of firm tofu.

Students are introduced to each other.

Setup

Instructor provides a brief overview of the entire process.

Begin Process

Students remove pre-soaked beans (started the evening before by the instructor), rinse and begin the tofu making process.

Primary Cooking Step

10:15 AM - 11:15 AM
Cooking Begins

Students cook the soy beans, creating the base soy liquid. Then students learn how to turn the base liquid into the thick paste which ultimately becomes solid tofu.

Students learn how to separate the soy milk, which is a natural by-product of the tofu making process, from the thick paste that will become the solid tofu.

11:15 AM - 12:00 PM
Drying and Formation

Students begin to eliminate moisture from the thick soy paste and form the final tofu.

Compressing

Tofu blocks are placed under pressure to remove remaining moisture. Then blocks are cut and recipes using the newly created tofu are prepared.

Recipes are prepared using the fresh tofu.
